New Italian menu at Spruce Ristorante at Phoenix Park
Under the purview of Executive Chef Mauro Scotto, former Chef-Owner of one Michelin-starred Ristorante Rocca Bruna (Rapallo, Italy), Spruce at Phoenix Park has launched a brand new menu comprising familiar Italian flavours and refined comfort classics.
Fresh, quality ingredients is a cornerstone of Spruce’ s philosophy. Keeping to tradition, food at Spruce is always MSG and additive-free and made from scratch – bread and pastry are baked fresh daily by an in-house pastry team, and even condiments and sauces are made fresh in-house. While the new menu has retained select Spruce favourites from the old menu – including a side menu of American-style burgers – the focus is on simple, unfussed Italian dishes to allow the quality of the ingredients to take centre-stage.
House specialties include Fritto di Calamari e Gamberi ($17), moreish fried squid and prawns served with a homemade Italian chilli; Orecchiette Gamberi e Zucchine ($22), freshly-made orecchiette served with sea prawns, spinach, and zucchini in a garlic-infused cream sauce; Spaghetti Carbonara di Mare ($23), a deceptively simple but sophisticated dish of spaghetti served with salted mullet roe, egg, cream, caviar, black pepper, and parmesan; Tonno alle Erbe ($28), melt-in-your-mouth, pan-seared yellowfin tuna served with broccoli flan and red onion, and Brasato di Manzo ($30), an ultra tender showstopper of 48-hour slow-cooked beef short ribs served with polenta, sauteed spinach and mushroom, a port wine reduction, and topped with a poached quail egg.
Never one to skip dessert, Chef Scotto recommends ending the meal on sweet note with Pistacchio Tiramisu ($14), homemade pistachio tiramisu served with warm espresso coffee, or Tortino di datteri e Ginger ($15), baked ginger date pudding served with warm chocolate and Kapiti vanilla ice cream.
