Begin with Sicilian Salmon Carpaccio, an antipasto featuring thinly cut slices of fresh salmon complemented with a side of bell pepper brunoise, sake mayo and ricotta-stuffed san marzono tomato that teases the palate for more. Next, be tantalized with the Homemade Porcini Raviolli, with richly stuffed sauteed porcini mushrooms in pumpkin cream sauce making for a robust filling to this classic Italian dish. Completing the pasta parcels, the dish is topped with tomato cuire and shaved parmesan. Refresh your palate with an intermezzo of Pineapple & Lime Barcadi Sorbet. A smooth and creamy sorbet intermission, the dessert’s dominant citric flavours and slight spiciness from the rum will readjust your tastebuds in preparation for the upcoming main course delights. Next, savour the fresh Cod in Proscuitto and saffron, with chilean white cod wrapped with prosciutto ham set on saffron cream sauce. This holiday season, splurge and indulge your senses in Chef Hide Yamamoto’s Christmas menu, a decadent arrangement of the freshest seafood and the finest meats that fuse the best of Japanese ingredients with European culinary influences and techniques. Begin your dining experience with an appetizer of Premium Chinmi and Sashimi, followed by Flambé Tomato with Rocket Salad and Croutons which uses the French cooking technique to infuse the dish with additional aroma and flavour. The next dish is Chef Yamamoto’s signature “Chawanmushi” Black Truffle Egg Flan with Fresh Sea Urchin and Snow Crab. Gently steamed to smooth silkiness, the egg custard is seasoned with light hints of black truffle and topped with fresh sea urchin and snow crab. From the Abalone Steak with Liver and Fresh Seaweed Sauce to Grilled King Crab with Lime Butter Sauce and Grilled Lobster with Sea Urchin Cream Sauce, the sweetness of the seafood in each dish is accented with rich, flavourful sauces, from the tangy yet savoury lime butter sauce to the sweet, ocean taste of the sea urchin cream sauce. The Kaiserhaus Christmas Special menu, prepared by Executive Chef Hans Lüftenegger, is a celebration of traditional cuisine from the cosmopolitan Habsburg region. The menu starts with a serving of the soup of the day for each diner, followed by a gorgeous roasted half duck, which will be served with bread dumplings, red cabbage, chestnuts and a Christmas apple. The meal comes to a sweet ending with a decadent slice of home-baked cake or pastry. Freshly prepared by the incredibly skilled Kaiserhaus Executive Pastry Chef Patrick Schilling, diners can choose from an extensive range of mouth-watering treats, such as the Raspberry Truffle Cake, the Kaisertorte (Emperor’s Cake) or a slice of the Sachertorte – a Viennese chocolate cake with a thin layer of apricot jam and glazed with chocolate ganache. The elegant, contemporary French restaurant presents two menus for Christmas Eve and Christmas Day. For the 5-course Christmas Eve Dinner Set Menu, Executive Sous Chef Mickael Le Calvez starts off the dinner with sweet and nutty Gillardeau Oysters, which are served with lettuce and fennel then topped with Oscietra caviar. Other standouts on the menu include the delicate Ravioli filled with Langoustine and Ceps coated in a creamy, tangy poulette sauce and garnished with shavings of the prized, subtly aromatic tartuffi di Alba or white truffle.
On Christmas Day, the lunch menu will feature dishes such as Polenta with Parsley Butter and Porcini where the parsley butter is slowly stirred into the polenta and Dover Sole served with Salsify, Black Mushroom, Lardo Di Colonnata and Sprouts in a Champagne Reduction. The Lardo Di Colonnata or cured pork lard lends a richness to the dish while the salsify, an added crunch. Chef Mickael ends the 5-course lunch with the delicate and light Chestnut Chantilly with Rum Jelly and Chocolate Sorbet, a beautifully plated dessert combining classic Christmas ingredients.
