Tiffin Room Celebrates the Festival of Lights with a Deepavali Buffet Menu

Raffles Singapore’s Tiffin Room pays homage to its colourful North Indian roots with a special Deepavali buffet, available from the 7th to 10th of November for lunch and dinner. The classic colonial restaurant tucked in the lobby of the hotel provides the perfect backdrop for families to gather over a meal in the days leading up to Deepavali. Raffles Singapore Sous Chef Kuldeep Negi and his team at Tiffin Room have created a sumptuous spread offering a wide selection of authentic North Indian delicacies to mark the Hindu festival.

To start off the meal, diners can try the Pani Puri Aur Chat, a light and airy bread which is fried until golden brown and then filled with a refreshing mix of tamarind and mint. Guests can also look forward to the Shahi Murgh Korma and Botti Kebab Aur Warki Parantha. The former features succulent pieces of chicken cooked in a fragrant saffron paste while the latter is fork-tender lamb, slowly braised with onion, tomato and Chef Kuldeep’s secret blend of spices.

Another highlight is the Achari Fish Tikka, a Hyderabadi dish which emerged during the Nizam Empire in the 16th century. Chef Kuldeep uses black cod for this dish and marinates it in turmeric, garlic and pickle spices before it is cooked in the tandoor. Vegetarians should not miss the Dahl Ke Kebab. The yoghurt and lentil-based patties are seasoned with ground cardamom for a slightly spicy and citrusy finish. The Vegetable Avial on the other hand, is a rich coconut sauce-based stew with a medley of pumpkin, carrot and beans.

Also part of the buffet is Tiffin Room’s signature range of chutneys. Guests can choose from an assortment of chutneys such as the pickled Sirka Pyaz featuring onions and beetroot in vinegar and sugar and the zesty Papaya Relish, where green papaya is cooked in sugar, onion seeds and red chili.  Diners can top off the Deepavali meal with sweet treats from the dessert spread including classics such as the Jalebi, deep-fried wheat fritter in saffron sugar syrup; and the carrot pudding, Gazar Halwa.
