Flavours of Ishikawa promotion at Keyaki

Explore the food culture of Ishikawa as the perfect prelude to the festive season at Keyaki from 12 November to 13 December 2015 as Master Chef Hiroshi Ishii features well-known ingredients from the Ishikawa Prefecture such as the Kano Gani (Snow Crab), Buri (Yellowtail) and Deep-fried Flounder.

Noto Hanto (Noto Peninsula), a peninsula that projects north into the Sea of Japan from the coast of the Ishikawa Prefecture, has a unique environment due to its geographical location as the ocean currents bring about many different kinds of fresh, quality seafood because of the rich mineral in the waters that flow to the East side from the mountains. Chef Ishii has specially selected unique local ingredients sourced from Ishikawa, offering guests the opportunity to experience the quintessential flavours of Ishikawa, also widely regarded as the ‘Food Treasury’ of Japan.

Culinary highlights include the Kano Gani (Snow Crab), caught from the West of the Pacific Ocean during the limited open fishing season from November to March for delicately sweet meat that is often enjoyed as a winter delicacy. The Ika Teppo-yaki is Chef Ishii’s rendition of the popular seafood from the Ishikawa Prefecture, with Miso stuffing in the squid, balancing the flavours to complement the sweetness of the squid. Deep-fried to perfection, the Flounder is a stunning dish providing wonderful contrast of the crispy skin and delicate flesh, and savour the Kaga Vegetables that are locally produced in the Ishikawa Prefecture where the water and soil in the natural environment give the vegetables a rich and crunchy texture.

Complement the dining experience with three specially imported Sake from Shishi no Sato, a small production brewery but well-known for its excellent quality and will be exclusively available at Keyaki. Guests who prefer non-alcoholic beverages can opt for the Shio Cider (salty lemonade) or Bocha Cide (Sparkling Brown Tea).

From 16 to 30 November 2015, meet Ms Natsuki Onaka from Lady Kaga as she speaks to guests during dinner on the culture and food of Ishikawa. Lady Kaga is an organisation where the ladies promote their hometown of Kaga Onsen-kyo through sharing and speaking to guests about its rich culture and history.
