The Line’s recently-appointed Chef de Cuisine Vincent Wong has enhanced the highlights for Sunday Champagne Brunch at The Line at Shangri-La Hotel, Singapore. Sunday Brunch lovers can now look forward to highlights at the 16 theatre kitchens that include foie gras presented 10 ways, 13 types of fresh seafood on ice and 30 types of New and Old World cheese served with unlimited Perrier-Jouët Grand Brut.

Diners will get to enjoy 13 varieties of fresh seafood on ice including oysters from Ireland, Sydney and France, and crab including Alaskan Red King crab, Alaskan Bairdi Snow Crabs and Sri Lankan Crabs. In the grand tradition of brunch, indulgent seafood presentations available include sashimi, Oyster Rockerfeller with France Prat Ar Coum oysters from Brittany and Lobster Thermidor.

Decadence abounds with foie gras presented 10 different ways and paired with ingredients such as beech wood, figs, yuzu, Tahitian vanilla and even chocolate chips.

Meat lovers will be spoilt for choice at the butcher’s station with Iberico ham and carving station which features six roasts including 48-Hour Slow Roasted Wagyu Beef Leg with a Mustard Crust, Australian Stockyard Tomahawk Steak, 200 Day Grain–fed Australian Stockyard Striploin Roasted Stockyard Beef Striploin with Truffle Jus, Herb-crusted Lamb Rack and more.

As a prelude to dessert, 30 varieties of cheese will be available, hand-selected artisanal aged cheeses will be available from the New and Old World. For diners with a sweet tooth, Area Executive Pastry Chef Hervé Potus presents a dessert extravaganza with 30 varieties of pastries, exquisite tarts and cakes, fruit trifle, Singaporean desserts and “kuehs” and ice cream. A frozen yogurt machine which dispenses two flavours daily allows diners to create their own yogurt with more than 20 condiments to choose from, including gummy bears, raisins, nuts and chocolate chips.
