Organic Welsh Lamb Promotional Menu at mezza9

From now to 3 May 2015, Executive Sous Chef Martin Satow of mezza9 presents a medley of 11 dishes from the deli, the grill, the steam basket, yakitori and Thai kitchen featuring Rhug Estate’s organic Welsh lamb.

Highlights from this promotional menu include the char-grilled lamb neck with green asparagus, smoked eggplant mash and olive jus ($44++), Gaeng daeng neua gae – red Thai curry with slow-roasted lamb shoulder, Thai eggplant, long beans and steamed jasmine rice ($34++ – see main image above), 6 hours slow-braised Rhug Estate lamb shank with lemon and rosemary couscous, heirloom carrots ($38++) and braised Rhug Estate lamb breast clay pot with leek, sesame and chilli paste ($44++).

With over 300 years experience in managing livestock, Rhug Estate is owned by the Newborough family who has had a presence in North Wales, United Kingdom since the 11th century. They manage an estate that is committed to an environmentally sustainable way of caring for the land under the organic system.

Antibiotic-free and 100% natural, all Rhug organic lambs are born, bred and reared on Lord Robert Newborough’s main farm in Corwen. The pastures are sown with a selection of herbs and grasses; including chicory, cocksfoot, timothy, red and white clover which all contribute to the award-winning taste and flavour. The lambs are reared under the highest animal welfare standards to comply with organic certification.
