Savour Autumn-inspired dishes at Buona Terra

With the new season comes new autumn flavours, and Buona Terra Executive Chef Denis Lucchi is highlighting those flavours within the new Autumn menus. Intricately plated with thoughtfulness to the natural colours and texture of each ingredient, the Autumn Menu promises to take you on a gastronomic journey to experience the earthy flavours of premium autumn ingredients. Priced at $148++ per person, the six-course degustation Autumn Menu is available until 20 December 2014.

Chef Denis begins the menu with Vitello Tonnato, a comforting dish of Sous Vide Veal Eye Round drizzled in tuna sauce, and paired with the decadent quail egg and caper. Relish in the taste of the freshest catch with Pesce Spada e Finocchio, where premium swordfish is seared and paired with fennel confit, sweet and fruity taggiasca olive harvested from the rocky mountain slopes of Italian Riviera and zesty salmoriglio sauce freshly whisked into perfect smoothness.

In Capesante e Tartufo, the natural sweetness of the seared fresh Scottish scallop is brought to center stage with celeriac puree, crispy Jerusalem artichoke and fresh black truffle shavings. Warm your tummy with Tagliatelle ai Fumghi Porcini, a dish of homemade tagliatelle tossed together with porcini mushrooms. Epicureans will be delighted by Guancetta di Wagyu, where wagyu beef cheek is braised to perfect tenderness, served with velvety potato cream and red wine sauce.

Finish the meal on a sweet note with the familiar taste of Italy. A bite into the mascarpone and creamy ricotta cheese in the Cannolo Siciliano a Millefoglie is akin to taking a ride on fluffy white clouds filled with pleasant surprises. Plated as a millefoglie and served with indulgent chocolate pieces, zesty candied orange and lemon pieces, the traditional Sicilian cannolo is layered with crispy pastry dough and drizzled in masala wine sauce.

Wine aficionados will be pampered by the wine pairing option available with the Autumn Menu, priced at $110++ person. Alternatively, let Chief Sommelier Gabriele Rizzardi make his recommendations from the selection of over two hundred labels of fine Italian wines at Buona Terra to complement Chef Denis’s creations.
