Southbridge: New oyster bar opens in Boat Quay
Southbridge is Singapore’s newest destination for chic and buzzy bar dining, offering the sinful coupling of oysters, cocktails, and champagnes. Tucked on a fully alfresco rooftop of a refurbished heritage shophouse in Boat Quay, Southbridge has arguably one of the best 360° view of the Singapore skyline, which spans from the historic Parliament House, across the Singapore River, to the iconic Marina Bay Sands and Boat Quay skyline.
Southbridge’s elegant yet unpretentious atmosphere extracts the very best of Europeans’ ‘savoir-vivre’ lifestyle – guaranteeing convivial service and the finest quality in the food & beverage without needing to break a bank. Its eclectic playlist of positive vibrations featuring upbeat world music also helps to transport one to a buzzy night out in Saint Tropez or a lively summertime vacation in Barcelona.
The 100-pax-seater bar-restaurant serves up a ‘fun-dining’ experience, with modern craft cocktails, unique champagnes and artisanal Japanese sakes to go with the real headliner of the space – the innovative small plates menu focused on oyster and seafood.
OYSTERS & SEAFOOD BAR
Southbridge carries a decadent selection of fresh live oysters; quality Premium Pacific oysters are paired with 6 different types of creative sauces. TROPICAL, which features 6 freshly shucked oysters topped with a homemade Thai sauce, or the Japanese-inspired UMAMI – dressed refreshingly with yuzu and ponzu –, goes at $20 during Happy Hour (5pm to 8pm) and $24 after 8pm. For a burst of flavor on the palate, PEARLS is 6 grilled oysters with a delicious blanket of white wine sauce and topped luxuriously with avruga caviar ($30 for 6 oysters).
Apart from its signature oysters, an ever-changing list of seasonal and rare oysters will also be available at Southbridge, including the famous French Belon oysters, and Irish Rock Oysters.
For a scrumptious, heart-stopping moment, dig into grilled sandwiches like the epically indulgent LOBSTER KNUCKLE ROLL ($28), TRUFFLE AND SMOKED PANCETTA BIKINI SANDWICH ($12) and the CHILLI CRAB CROQUE ($18), a toast (no pun intended) to the sunny island.
BUBBLIES & COCKTAILS
The cocktail bar at Southbridge is helmed by hunky and talented Italian barman Gerry Callipo, who hails directly from Bitter Bar, a Florence-based bar well known for modern mixology. All 30 of Southbridge’s original cocktails are made using artisanal spirits from small-batch distillers, homemade infusions and aromatics, and fresh tropical fruits.
Gerry’s personal remake of Caipirinha is THE ELGIN’S ($18), a delicious concoction of Abelha Silver cachaça, pineapple and Southbridge’s own homemade cinnamon-salted caramel. For a refreshing sip, SEX ON THE QUAY ($18) is a cocktail made with homemade earl grey-infused vodka, mango, raspberry and sugarcane juice.
In a unique union of sake, chase rhubarb vodka, pickle juice and asparagus, TAKUMI ($21) is an indulgent creation that proved that sometimes the most unlikely pairings could create a magnificent result.
For the strong-hearted, EL MACHO ($22) is the poison of choice. The lingering heat of young, unaged joven mezcal, produced by artisanal distiller Ilegal, is complemented by the bittersweet contrast of pickled pears and Cynar bitters. On the other hand, LA VIE EN ROSE ($18) is an elegant elixir of Italian berlucchi rose, lillet blanc and rose essence.
The craft cocktail menu is inspired by sultry midsummer nights, and includes a range of refreshing juleps, mojitos, daiquiris and slings made with fresh fruits only. Every smooth libation is a double shot of the finest spirit, ensuring a potent yet delicate tipple to last well into the night.
Avid rum drinkers can look forward to a carefully curated selection of the golden spirit. Every shot of rum is served with fresh guarapo (freshly-pressed sugarcane juice), taking one along on a sun-soaked Caribbean holiday with every taste. Or, sidle up the bar for Southbridge’s extensive list of French champagne, Italian bubblies, and artisanal Japanese sakes for the perfect pairing with the oysters.
Prices begin at $15 per glass for cocktails, and $18/glass for Southbridge’s house Bauget-Jouette champagne. Happy Hour is until 8pm daily, with special prices on its signature oysters, bubblies and spirits by the glass and bottle.
