New lunch menu at Ocean Restaurant by Cat Cora
Chef Cat Cora is back in town this May to launch a brand new lunch menu at Ocean Restaurant by Cat Cora incorporating more sustainable ingredients including wild John Dory and farmed Scottish Salmon. From 1 May onwards, guests can delight in a 4-course set lunch available throughout the week comprising a starter, two main courses featuring seafood and meat options, and ending with a sweet treat.
Some of the highlights include the Kingfish Tartar served with Watermelon, Passionfruit and Tomatillo Ice; Pan-Fried Fish from New Zealand served alongside an appetizing Pickled Celery Heart & Balsamic-Caper Reduction; and the Seared Lamb Loin sitting atop a Smoked Aubergine Puree finished with Ratatouille & Black Olive Oil. A palate pleasing main is the Crispy Skin Barramundi, served with Parma Ham Floss & Olive Oil Mashed Potato. This dish plays on the complementary flavours of pork and fish by adding parma ham floss that is created by sautéing, air drying then blending the ham.
The seafood options you can find in Ocean Restaurant by Cat Cora are made with sustainably sourced seafood obtained through aquaculture or controlled fishing, where only a certain amount or weight of fish is allowed per catch to prevent overfishing. These measures mean diners can fully indulge in guiltless fresh seafood courses with the knowledge that they are being conscientiously green.
