UNA Dining and Tapas Bar opens at One Rochester

After almost 6 months of planning, refurbishment and refitting, a completely revamped One Rochester re-opens its doors to a brand new restaurant and tapas bar, UNA. UNA which means “one” in Spanish or “coming together” in Latin is a fine dining restaurant and a tapas bar all under one lush venue and is the culmination of Chef Jean-Philippe Patruno, previously from the now defunct BOMBA Paella Bar.

UNA provides an elegantly cosy dining ambiance with its lush gardens, white trellises and classic décor across two dining levels – each with its own distinctive menu and cadence. On the garden level, UNA Dining is an elegantly cosy backdrop for the rich flavours from Spain, Italy and France. Bringing the best of Home-Style Spanish, Italian and French cuisines, the full menu designed by Chef Philippe offers exceptional appetisers, salads, soups, small and large portion mains, and a dessert selection showcasing the singular characteristics of each country’s cuisine that families indulge in.

The radish, celeriac, pomegranate, and pecorino salad with white truffle oil from Bocca, Italy showcases piquant cheese with crisp freshness and tangy bursts of sweetness, while the ox cheek, smoked mash, and persillade snails from Provence offer a mélange of intense earthy flavours topped with the savoury bite of crisp jamón. For a sweet finish, the bitter chocolat, olive oil, and salted rosemary soil inspired from Catalunya, Spain, features intense dark Valrhona chocolate whipped into a light ganache ice cream that floats on the palate, buoyed by crisp rosemary chocolate sand and frothy dark chocolate honeycomb.

UNA Tapas Bar

On the second level of One Rochester, UNA Tapas Bar enjoys a laidback vibe through Chef Patruno’s renowned tapas-style small dish menu, with a full bar offering wines, premium spirits, mixers and a selection of artisanal cocktails specially created for the venue and UNA’s concept in partnership with Proof and Co., the winner of World Gourmet Summit’s Bar of the Year. UNA will also be the first Sherry bar in Singapore in partnership with the World’s largest Sherry winemaker – Tio Pepe. Together with a unique and specially selected list of wines (80% of which are specially selected from Spain, Italy or France), UNA is set to become the most popular garden alfresco bar in Singapore.
