This season, fine-dining Italian restaurant – Buona Terra presents a six-course degustation Winter Menu with an exquisite selection of familiar and well-loved Italian dishes, each given a luxuriously elegant yet homey twist by Chef Denis Lucchi. Designed to comfort the heart, soul and tummy in the chills of winter, look forward to a menagerie of flavours prepared using the freshest ingredients from the sky, earth and sea.

Begin with a harmonious medley of flavours in Ventresca di Tonno e Caponata, relish in the savoury richness of the Charcoal Grill Tuna Belly as it melts on the tongue. The smoky flavour of the tuna dances in tandem with the tender sweetness of the Eggplant Caponata and the tangy Citrus Caramel sauce, prepared using the freshest oranges from Italy.

Chef Denis brings a unique spin to the traditional “Carbonara” sauce in the elegant dish of Scampo Lardellato, where the flavours of the sea meet that of the land. Served in the Egg Yolk “Carbonara” sauce, the sweet freshness of the Giant Mozambique Scampi Wrapper is brought home with the mouthwatering Pork Lard. This is followed by the Orata d’Amo, Porcini e Capperi, in which delicate Line Catch Sea Bream is served with silky Potato Cream, earthy Porcini Mushrooms, Capers and Tomato Confit.

For the mains, Chef Denis has prepared a simple and heartwarming traditional dish of Pizzoccheri Della Valtellina e Tartufu Nero Invernale – Buckwheat Pasta lightly tossed in the creamy mixture of Potato, Cabbage, Casera Cheese, topped with generous shavings of intoxicating aromatic Black Truffle. The Quaglia, Polenta e Salsa al Moscato is yet another staple for the season. Roasted to juicy perfection, the Quail is succulent and served atop the rustic Polenta made tantalizingly exquisite by the dulcet yet complex Moscato Wine Sauce.

The meal ends with a traditional winter dessert that combines all the warm and delicious flavours of the season -Strudel di Zucca e Mele, Salsa al Cioccolato e Grappa, Gelato al Fiordilatte. The light and flaky layered pastry is filled with an earthy mix of Apple and Pumpkin pieces, and served with a rich and refreshing scoop of “Fiordilatte” Ice Cream in a pool of Chocolate and Grappa Sauce. Chef Denis’ version of the classic pastry is guaranteed to satisfy all sweet cravings.

Buona Terra also offers a masterfully curated selection of Italian fine wines – many of which are exclusive to the restaurant – to suit every palate. Chief Sommelier, Gabriele Rizzardi will be pleased to recommend wine pairings or a bottle of wine to complement the gustatory delights of the evening.

The hearty Winter Menu ($148++ per person) showcasing classic winter favourites are available from now till February 2014.
