Latest eclectic offering from The Privé Group, the brand new WOLF is Singapore’s First ‘nose-to-tail’ restaurant. Serving up British, French and Southern-inspired food, WOLF was inspired by Fergus Henderson’s revolutionary 1-Michelin star restaurant, St. John where WOLF’s Chef de Cuisine Alysia Chan had a stint. Nose to Tail is about realising how delicious lesser known parts are, honouring the animal by letting nothing go to waste. Located in the fashionable Club Street, WOLF has an unconventional whimsical setting with chiselled wall murals and solid timber tables with playful hand crafted brass inlays of flying pigs.

WOLF’s menu showcases pork, beef, poultry, fish and vegetable options to suit all taste buds and preferences. The adventurous gourmand can indulge in offal options including head, ear and heart, while others can enjoy more conventional steaks and fish. Diners can expect starters like Pig’s Ear Salad ($20), Grilled Beef Hearts ($25) or Chicken Heart & Liver Salad ($18). The main courses are not for the faint hearted. Expect exotic dishes such as Roasted 1/2 Pig’s Head ($65 for two) which requires preorder, Beef Lips and Oxtail Stew ($32) and Grilled Ox Tongue ($38). Chef Alysia also serves up a few other interesting dishes as as Octopus and Chorizo Stew ($30), Crispy Sweetbread & Mushroom Risotto ($28) and Beetroot Chocolate Cake ($14).

Not quite your cup of tea, there are more conventional mains like the 300g Grass-Fed Ribeye Steak ($68), 250g Wood-Smoked Kurobuta Pork Chops (38) and Pan-seared Sea Bass ($28). Their lunch specials are a meaty affair, serving up 300g Ibérico Pork Ribs ($28), Beef Cheek Burger ($32) and Roasted Chicken Quarter ($26).

Wolf will be continuously innovating with more ‘specials of the day” soon using seasonable ingredients with even more unconventional cuts and parts. Diners can also look forward to a Nose to Tail degustation menu through the entire animal in the near future. Wolf carries over 150 labels of wines, from traditional French, Italian to New World as well as a selection from up-and-coming regions at affordable prices. Is your curiosity piqued?
