Gastronomy reaches celestial heights this November in Singapore as the much anticipated Chefs With Altitude, a week-long epicurean extravaganza featuring world-class chefs and mixologists, returns. From 11 to 17 November 2013, award-winning Chef Xavier Beaudiment from one Michelin-starred Le Pré and Chef Julien Schillaci from Restaurant A L’etage Parc Des Eaux Vives as well as the outstandingly talented drinks specialist Tristan Stephenson from Worship Street Whistling Shop, will be in town to pique your palates and heighten your dining experience.

Be intrigued by the harmonious flavours and playful presentations of the ambitious and charismatic Xavier Beaudiment, Chef Owner of one Michelin-starred restaurant, Le Pré in Durtol, France, who was recognised as a young rising star by the prestigious Michelin and Gault Millau guides in 2011. Reigning from the beautiful countryside of Auvergne and having worked in the kitchens of numerous culinary heavyweights in his formative years like the great Antoine Westerman at his famous three Michelin- starred Le Buerehiesel in Alsace, Jean Yves Bath, celebrity chef Pascal Proyard, and Alain Dutournier, Chef Xavier cultivated a cuisine that is immensely influenced by his surroundings and is truly an ode to nature. He returned to his roots to set up contemporary restaurant lounge L’Atelier before taking over Bernard Andrieux’s Michelin-starred restaurant in Durtol to open his present and highly acclaimed Le Pré.

At JAAN, a menu specially curated around the season’s freshest ingredients will be presented to eloquently reflect Chef Xavier’s profound understanding and respect for carefully sourced produce. Savour exquisite creations such as Milk-Fed Veal Tartar, Citrus; Organic Egg, Smoked Potato, Black Truffle; and Bresse Pigeon, Carrot, Galanga.

The young and passionate Julien Schillaci, Executive Chef of Restaurant A L’etage Parc Des Eaux Vives, Geneva, Switzerland, will captivate with his honest approach to Modern European cuisine that elaborates seasonality and provenance, bringing forth the finest quality produce. Chef Julien spent three years in Northern France working as an apprentice to hone his craft and moved to Geneva, Switzerland, in 2005 to join Restaurant Hôtel du Parc des Eaux-Vives. Within four years, the restaurant’s widely commended Head Chef, Olivier Samson, handed over the reins of the kitchen to the talented Chef Julien who has since upheld the restaurant’s status as one of the jewels in the gastronomical crown in the Geneva region. Managed by Swissôtel Hotels & Resorts, the establishment is housed in a historical 18th century building located in the beautiful Parc des Eaux-Vives and boasts a grand view of Lake Geneva.

Cocktail aficionados will be suitably impressed by the bespoke concoctions prepared by Tristan Stephenson whose richly colourful background will further intrigue, having been involved in the hospitality industry for over 10 years. In his early years, Tristan was in charge of setting up the bar at Jaime Oliver’s Fifteen Cornwall and had free reign to experiment with pairings, seasonal cocktails, home-made soft drinks, bitters and tonics. Two years later in 2007, he left to assume the role of Brand Ambassador for the Reserve Brands Groups, training bartenders at some of the most highly regarded bars and restaurants including The Dorchester and The Ritz Carlton on the delights of Rum and Vodka across the United Kingdom. With a huge passion for tea and coffee in addition to alcoholic beverages, Tristan came in 3rd at the UK Barista Championships in 2009. Leading up to this great accomplishment, he successfully harvested, processed, roasted and brewed the first cup of UK grown coffee from the Eden project in Cornwall. Subsequently, Tristan founded his own drinks consultancy firm which led to the opening of his first bar in 2010 and Worship Street Whistling Shop in 2011. His bars have received international critical acclaim, of which Worship Street Whistling Shop was awarded Time Out London’s best new bar in 2011 and one of London’s top 25 bars in 2012. A momentous year for him, Tristan was also awarded “UK Bartender of the Year 2012” by Class magazine. Another exciting project underway is his soon-to-be launched book, titled “The Curious Bartender: The Artistry & Alchemy of creating the perfect cocktail”.

Renowned for his multi talents as a home-brewer, distiller and all-round chemist, Tristan will showcase a collection of clever cocktails at City Space that melds his insightful knowledge in cocktail science, molecular mixology and forward thinking techniques.
