There is no better way to kick-start your celebration than to have the one and only beer turkey. This savoury bird is brined with The Pump Room’s Wheat Ale, juniper berries, black peppercorn and bay leaves for over 16 hours and roasted in the oven for 1.5 hours at 170 degree Celsius. The result is a glistening brown roast with a subtle fragrance from the wheat ale. The accompanied triple-berry-beer sauce gave this tender and flavoursome bird an added sweetness and refreshing burst of berries flavour.

This Japanese-inspired turkey is the brainchild of the Executive Sous Chef Kong Kok Kiang (KK). Chef KK uses red miso (also known as aka miso) and mild wasabi paste to marinate the turkey overnight before steam-baking (baking in the oven with water) it for 45 minutes. The turkey is then roasted to perfection for another 45 minutes. Served with Chestnut, Japanese Steamed Rice, Sautéed Edamame, Lotus Roots and Warm Goma Sauce, this unique turkey is moist and tender.
