The white truffle, also known as the white diamond, is one of the world’s most expensive and delicious ingredients and it’s one of the great luxurious gastronomic delights of Italian cuisine. Appear only once a year between the months of October to mid December, food lovers will traveled from afar to savour the gastronomic object of desire, famous for its earthy aroma and fresh, unique, delightful taste.
To celebrate the season, these rare and ever-so-special delicacies are making a star appearance at Bontá Italian Restaurant & Bar this November. Diners will be able to enjoy an exclusive menu featuring the rare fungis. Chef Luca Pezzera has created five classic white truffle creations to celebrate the restaurant’s fifteen anniversary.
The addition of the fresh white truffle to even the simplest recipe will make the flavours intensify; they are truly the perfect complement to Chef Luca’s selected dishes for this exclusive menu. Look forward to Chef Luca’s authentic creations such as homemade ravioli filled with braised veal ossobuco and served with Alba white truffle ($92), risotto with cresenza cheese and Alba white truffle, ($82), asparagus alla fornarina – green asparagus with fried egg, sage and Alba white truffle ($82), wagyu beef carpaccio with shavings of Parmesan cheese and Alba white truffle ($82), roasted veal tenderloin with soft polenta, Barolo glaze and Alba white truffle ($122), homemade angel hair with light Parmesan cheese and Alba white truffle ($82) and Alba white truffle ice cream – homemade egg custard ice cream with shavings of white truffle ($28).
Asparagus alla fornarina is one of chef’s favourite dishes. The crunchy asparagus, a fried egg wonderfully paired with generous shavings of white truffles, are simply addictive. If you are a beef lover, savour the beautifully marbled wagyu beef carpaccio with shavings of Parmesan cheese and Alba white truffle. For a heartier portion, try the roasted veal tenderloin served on top of the soft polenta, drizzled with the deep mahogany Piedmontese Barolo glaze and enhanced by the gorgeous scent of Alba white truffle. A conservative choice is the angel hair pasta cooked to perfection to bring the best in the white truffles.
