From 21 July to 18 August, Carousel at Royal Plaza on Scotts brings a sumptuous Moorish feast from Southern Spain to its buffet counters. Spanish guest chef Esmeraldo Oteruelo will be here to cook up authentic Moorish dishes from his home country.  Specialises in seafood, Chef Esmeraldo believes in simplicity in the preparation to retain its natural sweetness and freshest flavours.

So be prepared to indulge in an array of Moorish highlights such as Paella Morisca (Moorish seafood paella), Lubina Charmula (charmula seabass – see main photo above) and Vieras Mozarabes (sea scallops with saffron sauce). Other signature dishes to look out for include Carrillera de Ternera Tajine (Moorish-style veal cheeks) and Tajine de Pisto Manchego (vegetable stew).
